Direct, lead and manage all aspects of the UPMC Executive Kitchen and its essential functions and responsibilities. Provide the highest quality of service, instruction, training and culinary expertise. Provide for all activities occurring in the Executive Kitchen in collaboration with the Dining Service Director. Acts as contributing member of the Business and Corporate Events management team, working closely with management members to ensure successful operation of the department and its functions.



  • Prepares all menu items for corporate airplane.
  • Expertly proficient in all pastry arts and baking skills.
  • Maintain a sanitation program according to HACCP guidelines to ensure food safety and inspection.
  • Lead UPMC's team of Executive Chefs through all developmental and execution of Executive level functions and high-end boutique Special Events.
  • In collaboration with the Dining Services Director, recruits, hires, schedules and trains all back-of-the house kitchen staff.
  • Routinely consults with UPMC executives on their specific dietary requests and/or needs.
  • Manage and lead multiple outlets and venues with which the Executive kitchen is involved; designing all kitchens, facilities, concepts and menus accordingly.
  • Maintain financial accountabilities and reach all budgetary goals.
  • Maintain and lead a world class operation; focusing on the highest level of food, menu selections, presentation techniques, service, communication and leadership.
  • Knowledgeable of healthy foods and incorporating into daily menus.
  • Assure all meals are expertly prepared, presented and served consistent with five-star restaurants, hotels and Senior Executive level catering operations.
  • Expertly and creatively prepare and present foods in a manner that meets the high expectations of the UPMC President, Senior Executives, Executives, International/National dignitaries and all guests.
  • Actively engage in all assigned development and fund-raising activities.
  • Utilize local, seasonal ingredients focusing on organics, sustainability, bio-environmentalism and Health and Wellness.
  • Management of and execution of daily a la Carte lunches as well as Business and Corporate Event menus.
  • Demonstrates high degree of confidentiality that is consistent with Senior Executive level environments.
  • Insure all foods and services are appropriately provided to UPMC Executives regardless of location.


  • High School diploma required.
  • Advanced degree in Culinary Arts with a minimum of five year's experience required
  • Experience in a four or five star fine dining operation with executive clientele is preferredIn-depth knowledge of fine dining foods, menus and presentation techniques.
  • In-depth knowledge of International cuisines and styles of presentation.
  • Strong proven leadership and ability to effectively communicate with all levels of individuals.
  • Ability to work with minimal supervision and exercise sound judgment.
  • Ability to work extended hours when required.
  • High level of professionalism and confidentiality.
  • Good command of the English language, including spelling, grammar and punctuation.
  • Good organizational and planning skills.

Licensure, Certifications, and Clearances:

  • Allegheny County Health Dept. Food Safety Manager Certification OR Servsafe Certified
  • Act 34
