Description
Purpose:
The Executive chef provides over-all management and direction to the food production and food storage operations. The Executive Chef provides leadership and managerial support in planning, organizing, staffing and controlling day to day operational functions related to food production.
Responsibilities:
- Supervises and manages the food production and cooking operations to ensure efficiency, productivity, sanitation and consistency.
- Plans patient, cafeteria and special function menus.
- Ensures that recipes are correct and followed in accordance with set standards. Provides recipe input at Chef's Advisory Committee.
- Coordinates the activities of the cooks. Ensures quality and safe handling of food products.
- Supervises Storeroom Personnel and is responsible for overseeing departmental purchasing, receiving and inventory management.
- Conducts and documents service recovery for customer complaints.
- Schedules personnel to meet operational needs and in accordance with volume and budgetary guidelines.
- Conducts employee performance evaluation and interviews. Aides in hiring new personnel.
- Manages equipment use and maintenance.
Qualifications
- Associates or Bachelors Degree in Culinary Arts or related field of study is required.
- ACF Certification is preferred but not required.
- ServSafe Certification is required (must be obtained 90 days after employment)
- Catering experience required
- Minimum 5 years in Food Production operations. (3,000 meals/day)
- Minimum 2 years experience managing food production operations in Healthcare setting preferred but not required.
- Knowledge of Department of Health and other regulatory agencies is essential.
- Knowledge of newest cluinary trends, new business, menu creation and retail experience preferred
- Skilled in various cooking methods preferred
